The plum rains have now passed and the heat has arrived, as if we have already entered full summer.
This time, I would like to introduce some noodle dishes that are recommended for this time of year.
Sichuan pepper and scallion soba

As the weather gets hotter, I think many people will have more opportunities to eat savory and spicy dishes.
Stir-fry ground meat, green onions, chives, ginger, Sichuan pepper, etc. in pepper oil.

Green onions are said to help recover from fatigue, while chives are said to be nourishing, strengthen the body, prevent anemia, and improve the intestinal environment, so they are foods that you should definitely incorporate into your diet.
Place the stir-fried ingredients on top of boiled Chinese noodles and mix thoroughly before eating.
The finishing touch of scallion oil really enhances the flavor, and the combination of just the right amount of numbing and spicy taste is addictive.

Chilled pho

Pho is a Vietnamese dish that is familiar in Japan, and I think there are many people who enjoy it.
The refreshing broth and smooth noodles make this one of my favorite noodle dishes.
On these hot days, try adding ice to your pho for a chilled bowl.

Whitebait and Japanese pepper noodles

On this day, I saw some Japanese peppercorns at a grocery store near my house, so I decided to buy some.

While preparing the sansho peppers, a refreshing scent reminiscent of early summer spreads, leaving you feeling refreshed.

A simple noodle dish where your choice of noodles are combined with boiled whitebait, egg, myoga ginger, and sansho pepper berries, and drizzled with chili oil.
The saltiness of the boiled whitebait is delicious enough on its own.

This is a recipe that I used to introduce at my previous workplace, and since then I've been able to make it like this myself.
It's amazing how when you have delicious ingredients, you don't need excessive seasonings or condiments.
You don't feel like eating much, you just want something quick and easy, but you also want to get some nutrition.
These are some recommended noodle dishes for this coming season.
